Mayim Bialik: My Obscenely Organized Plan for Passover

Passover begins Monday night with the first of two seders. Because of my work schedule, I can’t host the seders this year. My ex-husband has generously offered to host in his house for the first time.

How? What? Why? Seriously?!

My ex and I decided even before our divorce was publicly announced that we would put our kids’ needs first as much as humanly possible, which we decided meant including each other in holidays and family events as much as possible. As I discussed here last year, last Passover was the first Passover since my divorce, and my ex and his mom and my parents and my uncle and our kids all celebrated together.

In this past year, we have spent holidays such as Thanksgiving together (and with each other’s parents!), we have attended weddings together from respective sides of our families, and we have even done things like go to Disneyland with our kids (and my ex’s mom) and take them to their first movie together. It’s not always 100% comfortable, but as far as our kids are concerned, it is. They know we’re divorced, I promise. The whole two houses, two sets of sneakers, two toothbrushes, and shlepping toys and dolls and Hebrew homework back and forth makes it really clear that we are divorced. Highlights From Mayim Bialik’s Book Tour for “Mayim’s Vegan Table”

You’d have to be living under a large soundproof rock–or out of reach of a television, radio, or computer–to not know I just did a book tour in New York for my new book, “Mayim’s Vegan Table.”

Well, just in case, here are the highlights of my publicist Heather and my whirlwind tour of New York for my book. Heather (VP of Much & House Public Relations) and the good people at De Capo Press worked very hard to put together an incredibly (impossibly?) packed itinerary and I am sharing with you the major appearances, hilarious and awkward highlights, and LOL moments of each appearance.

As a general rule, as you read this, please know that it’s very hard to insult me or make me feel small or insignificant, because I sort of feel that way all the time as a modest default. Exclusive Sneak Peak: Nondairy Kugel Recipe From My Cookbook, “Mayim’s Vegan Table”

Kugel is a popular casserole in Eastern European Jewish homes, and comes in many varieties. This vegan version of a dairy kugel is cheesy and rich. It tastes a bit like macaroni and cheese—in fact, this is quite similar, but with a touch of sour cream for that classic and slightly tart kugel taste. Serve as a side dish or eat as a main course.

1 (16-ounce) package pasta, such as farfalle, shells, or large macaroni

1/2 onion, diced (optional)

1 1/4 cups nondairy milk (almond milk works well)

2 tablespoons all-purpose flour or white or brown rice flour

1 (8-ounce) package shredded vegan cheese, preferably mozzarella or cheddar

3 tablespoons vegan margarine

3 tablespoons vegan sour cream

1/2 cup bread crumbs (optional)

Cook the pasta according to the package directions. When al dente, drain and place in a large bowl.

Preheat the oven to 350°F. Mix the onion, if desired, with the cooked pasta.

Heat 1 cup of the nondairy milk in a medium saucepan over medium heat.

In a cup, whisk the flour into the remaining 1/4 cup of milk until dissolved. Add it slowly to the heated milk, whisking as you go. Add the shredded vegan cheese and stir constantly until the cheese dissolves and the sauce is bubbly, about 5 minutes. Add the margarine and vegan sour cream to the sauce and stir to combine. Pour over the pasta mixture and mix well.

Place in a 9 × 13-inch casserole dish and cover with the bread crumbs. Bake, covered, for 20 minutes, until heated through. Uncover and broil until browned on top, about 5 minutes.

Vegan Kosher for Passover Recipes

mini potato kugelsSure, finding great food to eat during Passover when you’re also a vegan can be a little trying, but it’s not impossible. Here are my three favorite recipes that are kosher for Passover, vegan, and totally delicious. Bon appetit!

1. Mini Potato Kugels – They’re cute, easy to make, and even easier to enjoy.

2. Eggplant Casserole – I’m not even an eggplant kind of girl, but I love this dish.

3. Chocolate Truffle Pie – Hello, it’s chocolate! And utterly to die for.
