Cinnamon-Sugar Coconut Doughnuts–A 15-Minute Hanukkah Recipe

If you’re still looking for new recipes for these last days of Hanukkah, look no further than this simple treat from Sina Mizrahi, author of the kosher food blog The Kosher Spoon.

For those who are especially busy during the week, make these easy 15-minute Cinnamon-Sugar Coconut Doughnuts. They are a breeze to make, requiring no yeast or rising time. Their texture is perfectly fluffy, with the dough being dense like cake rather than airy like traditional doughnuts. They are also moderately sweet, and the coconut gives a hint of flavor that’s pronounced yet subdued. A wonderful recipe for your busy, light-filled Hanukkah.

Cinnamon-Sugar Coconut Doughnuts

1 1/2 cups white whole wheat flour
1/4 cup sugar
2 Tablespoons ground coconut
2 teaspoon baking powder
1/2 teaspoon salt
1/2 cup almond milk
2 Tablespoon coconut oil
1/2 teaspoon vanilla extract
1 egg
oil, for frying

1/4 cup sugar
2 Tablespoons ground coconut
1 Tablespoon ground cinnamon

Heat the oil in a fry pan until it reaches 375F, or until it’s really hot. In a bowl, combine the flour, sugar, coconut, baking powder and salt. In another bowl, pour the milk, oil, vanilla, and egg. Mix the dry ingredients into the wet ingredients. With wet hands, form balls and drop into the oil. Fry them on each side until they are golden brown. Transfer to a plate lined with paper towel to absorb the oil. Once they cool slightly, roll them in the coating. And then enjoy!
