Cinnamon-Sugar Coconut Doughnuts

Ingredients

1 1/2 cups white whole wheat flour
1/4 cup sugar
2 Tablespoons ground coconut
2 teaspoon baking powder
1/2 teaspoon salt
1/2 cup almond milk
2 Tablespoon coconut oil
1/2 teaspoon vanilla extract
1 egg
oil, for frying

Coating
1/4 cup sugar
2 Tablespoons ground coconut
1 Tablespoon ground cinnamon

Directions:

Heat the oil in a fry pan until it reaches 375F, or until it’s really hot. In a bowl, combine the flour, sugar, coconut, baking powder and salt. In another bowl, pour the milk, oil, vanilla, and egg. Mix the dry ingredients into the wet ingredients. With wet hands, form balls and drop into the oil. Fry them on each side until they are golden brown. Transfer to a plate lined with paper towel to absorb the oil. Once they cool slightly, roll them in the coating. And then enjoy!
